Orange Marmalade Cake
Ingredients
Butter and flour, for the pan
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup orange marmalade, room temperature
1 teaspoon vanilla
1 stick (1/2 cup) butter, room temperature
1 cup sugar
2 large eggs
1 cup buttermilk
Confectioners' sugar, for dusting
Preparations
Preheat the oven to 350 degrees. Butter and flour a 9-inch cake pan, and set aside. Mix the dry ingredients (flour, baking soda, and salt) together with a whisk in a medium bowl, and set aside. Place the marmalade and vanilla in a small bowl and stir with a spoon to break up any clumps. Cream the butter and sugar together in a large bowl with a handheld mixer until light and creamy, about 3 minutes. Add the eggs one at a time, and mix until smooth. Mix in about a third of the dry ingredients, and then add half of the buttermilk and mix again. Repeat with another third of the dry ingredients, then the rest of the buttermilk, and finally the remaining dry ingredients, mixing between each addition until the batter is smooth. Fold in the marmalade and pour the batter into the cake pan. Bake the cake for about 45 minutes, or until a toothpick inserted in the center of the cake comes out clean. Let the cake cool about 5 minutes. Invert the cake onto a cooling rack, and then again onto a serving plate. Sift confectioners' sugar over the cake, and serve warm. (Makes 8 servings)
